The Artist behind edition #2
Paola Parés
Infinite backgrounds
Attention to detail, technique and an insatiable curiosity form the cornerstones of all of her work. For Paola, technique and purpose are two necessary and inseparable elements for a drawing to be successful. She is able to create both meaning and depth in her work through technical constraints that she establishes herself: reduced size, black and white drawing using Indian ink, changes to the original drawing kept to a minimum.

Short Profile
///
Colour :
vibrant gold.
Nose :
intense, complex, concentrated. Its medicinal nature (ointment, camphor) goes perfectly with the ripe fruit (pear, peach). It develops into spices (pepper, cinnamon, ginger), cut hay and rosemary. Liquorice and fresh tobacco punctuate its aromatic palette.
Palate :
rich, creamy, balanced. Initially, citrus fruits (lemon, grapefruit) impose a bitter framework. This gradually mellows and gains in serenity. Malted barley and exotic fruit (pineapple, persimmon) begin to appear.
Finish :
long, taut. Fresh tobacco and dark chocolate showcase its maturity. The bitterness makes way for sweet and succulent fruit (apple, pear). It becomes increasingly honeyed (acacia). The retro-nasal olfaction is intensely fruity and very well-balanced. The empty glass is slightly saline.

Bowmore 1974
Over 30 yearsIslay Single Malt - 52%, 70cl - Single Cask #3841- Hogshead
Limited edition of 160 bottles
Exclusive to LMDWWe absolutely loved this Bowmore the first time we tasted it in the Signatory Vintage warehouses almost exactly one year ago. Everything has already been said or written about Bowmore. Every possible superlative has been used to describe certain versions, which have already entered the pantheon of top whiskies. However, we could never praise the complexity, richness and especially the nuances of this single malt enough.

Colour :
vibrant gold
Nose :
complex, fine. The great Bowmores are always stamped with a chiselled peat that enhances the aromatic palette by seeping into all of its nooks and crannies. In addition to the peat, exotic fruit (pineapple, passion fruit), fleur de sel, vanilla, chocolate, citrus fruits (grapefruit), leather, smoke and mild spices (cumin) can fully express themselves as well.
Palate :
outstanding finesse. Medicinal and lively. With even more intensity, it reproduces the nose’s complex aromatic palette. A real invitation to sail away, it displays exquisite notes of fruit, spices, liquorice and damp earth.
Finish :
long, silky. Although peat is omnipresent, it remains discreet throughout, while exotic fruit hits back with a vengeance. The empty glass is a bouquet of flowers with rich colours and intoxicating perfumes.

Short Profile
Exotic fruit (pineapple, persimmon), citrus fruits (orange, tangerine) and beeswax. Flowers (peony). Cinnamon, cardamom, curry. Chocolate and cream.
Colour :
deep burnished gold.
Nose :
simultaneously ample, fine, rich, creamy and soft. Highly complex, it is herbaceous, vanilla-scented, fruity (apricot, date), malty, liquoricey and floral (peony, rose). The second nose is more precise. The fruity and floral perfumes gain in finesse. The elegant and distinguished character of Linkwood can now fully express itself.
Palate :
like the nose, it wavers between creaminess and liveliness. The nose and palate are united in a liquorice base. Vanilla changes to chocolate while walnut and acacia honey provide a sweet and sour mid-palate. Ethereal, it develops into fresh fruit (Mirabelle plum, peach, nectarine).
Finish :
streamlined, refined. Malted barley strokes the palate. Its grain is delicate, almost powdered (cinnamon, ginger). Its spicy temperament (cloves) mingles with freshly cut grass and notes of precious wood (oak, cedar). Endless, it becomes gradually medicinal (ointment). Abundant amounts of dried fruit and nuts (almond, raisin). The empty glass is floral (violet, freesia, primrose) and fruity (blueberry, blackberry).

Exclusive to LMDWOriginal, classic, reserved, luxuriant, complex, accessible, true, natural, delicate, powerful, ethereal, deep rooted, captivating, poetic: there are no end of flattering adjectives to describe the scope of this 15 year old Caol Ila’s aromatic palette. “Caol Ilaresque” aptly sums it up.

Short Profile

Colour :
vibrant gold.
Nose :
fine, distinguished. Smoke and peat are placed on the right side of the glass. The centre is herbaceous, medicinal (ointment) and earthy (gentian root). The left side of the glass is made up of fresh fruit (grape, redcurrant). As to its depth, peat is on the surface closely followed by fruit, and herbs at the bottom. Magnificent.
Palate :
powerful, rugged. Equally magnificent, it reveals a peaty-ashy-saline impression. Extremely “Caol Ilesque” and highly mineral. The overall effect is delicate, natural and highly lyrical.
Finish :
the palate endlessly unfolds all of its treasures. Fruit, flowers, tar, soot, aromatic plants, lime blossom, peat, smoke, salt and lemons, each and every one of its flavours are exquisitely mature. Mature, remarkably simple and genuine, it becomes increasingly peaty. Such presence! Such warmth!
