Our mashes are made exclusively from French grains and fermented for over three days using four distinct yeast strains. This carefully controlled fermentation process gives them remarkable aromatic richness, characterised by a high concentration of esters, the hallmark of their complexity and intensity of flavour.

Our eleven stills, varying in size, shape and heating methods, allow us to explore a wide range of aromatic profiles. From direct-fire heating to steam injection, each configuration lends its own distinctive character to the distillates. This diversity creates a veritable library of flavours, essential to the precision and richness of our blends.

Our whiskies mature in three warehouses, each with its own distinct climate, across a wide variety of casks. Bourbon, sherry, cognac, wine, mistelle and bespoke new oak casks each impart their own distinctive aromatic characteristics. This diversity of maturation creates a true mosaic of flavours, contributing to the richness and complexity of our whiskies.
