Founded in 1948 in Iwakuni, Yamaguchi Prefecture, Dassai is currently led by Hiroshi Sakurai, who transformed the family-owned Asahi Shuzō into a global benchmark for modern sake. By blending tradition with innovation, the house utilizes temperature-controlled fermentation, precise digital monitoring, and a very gentle pressing process.

All of its sakes are Junmai Daiginjō, crafted exclusively from Yamada Nishiki rice polished to extreme ratios, reaching as low as 23%. Dassai embodies a pure, elegant sake with an international vision. Its name, meaning "the otter festival," evokes the idea of cultural sharing and celebration.
