Nose : Subtle yet full of character. Oxidative (turpentine), ashy, herbaceous (cut hay, sage) and rooty (gentian), the first nose is extremely deep and complex. With aeration, heady florals (lilac, carnation) and fresh fruits (pear, mirabelle) bring even more complexity.
Appearance : Or vif.
Palate : Noble, nuanced. On the attack, flavours of dark chocolate, candied lemon and liquorice, salty and mineral (slate) peat seep deep into the taste buds. The mid-palate then develops a deliciously rich register (flan, crème brûlée).
Overall : Long, extremely fresh. The inspired finish first returns to the image of a barley field swept with a salty sea breeze (sea spray). Gradually, noble spices (star anise, clove) and more empyreumatic flavours (incense, agave) find perfect harmony with notes of vanilla and fresh walnut.
