Fondée en 1818, Billecart-Salmon est une des rares maisons de Champagne à demeurer entièrement familiale. La 7ème génération aux commandes est soucieuse de transmettre son amour du champagne en restant fidèle à ses valeurs: « privilégier la qualité, viser l’excellence ». Située à Mareuil-sur-Aÿ, la plupart des vignes se trouvent sur les grands terroirs favorables au pinot noir, au chardonnay et au pinot meunier. La maison est particulièrement connue pour ses cuvées de champagnes rosés mais également pour sa cuvée Nicolas François Billecart 1959, élue « Champagne du Millénaire » lors d’une dégustation à l’aveugle de 150 millésimes des plus grandes maisons de champagne en 1999.
