Natural Sakés

Sakes called plain, are sakes in which the polishing of the rice is quite low in order to keep a maximum of matter and in which no yeast (kobo) is added during the fermentation. The producers prefer to let the sake ferment naturally using the indigenous yeasts already present in the air.
