Senkin is a local brewery dating back to 1806. However, the two young brothers, Usui, completely transformed the post-war heritage of their ancestors. They significantly reduced the production volume and returned to traditional production methods while maintaining a certain modernity in the final product. Motivated by the idea of challenging conventions, they wanted to develop their own formula for sake that is both sweet and acidic.
