1 1/2 ounces Gin
3/4 ounce Suze
3/4 ounce Elderflower liquor
4 dashes Black lemon bitter
1/2 ounce Lime
6 ounces tonic water
Garnish: shiso leaves
THE TWO ISLAND GIN&T RECIPE
1 1/2 ounce Gin
1/2 ounce yuzu-shu or yuzu sake
Top Tonic water, to top
Pinch of Maldon sea salt
Garnish: mint sprig
THE PSG&T RECIPE
1 1/4 ounces cinnamon-infused gin
3/4 ounces pinot blanc
3/4 ounces manzanilla sherry
1 ounce squash syrup
3 ounces tonic water, to top
2 dashes tartaric acid
2 dashes Angostura bitters
Garnish: orange wheel, torched cinnamon, grated nutmeg
