Anise-forward, herbaceous freshness, barely any liquorice. The first release from Distillerie des Alpilles, "Le Tranquille" is a craft pastis that balances approachability with aromatic depth. On the palate, it opens with familiar reference points — star anise, liquorice and a hint of bay laurel — staying true to the spirit of widely enjoyed pastis styles, without unsettling expectations. It quickly establishes its own identity, however: verbena freshness gives way to the Provençal garrigue, with distinct notes of thyme, savory, hyssop and mugwort, each derived from individual macerations and distillations. Less sweet than market standards (15 g/L), "Le Tranquille" retains a remarkable aromatic intensity even when diluted.
