KOSHI NO KANBAI

Established in 1907 in the Kameda district of Niigata, Ishimoto Shuzo brewery produces a sake that is remarkably light yet profoundly deep, benefiting from the cold winter climate and pristine local waters. The name Koshino Kanbai refers to the local plum trees, famous for their elegant blossoms in the heart of winter.

The founder, Ryuzo Ishimoto, was meticulous in his selection of rice varieties. His successor, Shogo Ishimoto, established the brewery's signature pure and seamless style by embracing the local soft water, implementing rigorous polishing standards, and mastering a slow fermentation process.
