Founded in 1487 in Nikaho, Akita Prefecture, Hiraizumi Shuzō is one of Japan’s oldest sake breweries, currently led by its 27th-generation head, Masaaki Saito. Renowned for its mastery of the traditional Yamahai method, the brewery crafts sakes characterized by a bold structure and distinct acidity.
Situated between the Sea of Japan and Mount Chōkai, the brewery benefits from a cold climate and exceptionally pure water—ideal conditions for a slow and controlled fermentation process.
