HITEN Hina

The concept behind this new sake, “Hina,” is based on the use of Yeast No.77 to produce a low-alcohol sake. At Hiraizumi, even their so-called low-alcohol sakes have traditionally been around 14%, but this time, they’ve achieved an even lighter profile at just 12%. While “Hakucho,” the popular sake from the Hibird series, uses white koji, Hina brings together the double acidity of both the yeast and the yamahai method. The result is a perfectly balanced sake — neither too rich nor too light — supported by gentle sweetness and refreshing acidity. With its light texture and a harmonious blend of sweetness and acidity, this is the ideal summer sake. Serve it well chilled to enjoy its finesse.
