DISTILLERIE CAZOTTES 2017 Prunelles sauvage

Sloe or Prunus Spinosa, small fruit with huge potential. At the end of December, after the first frosts, when the concentration of aromas and taste is really high, we begin our hunt for Wild Sloes. The berries are manually crushed one by one, then begins the gentle maceration in the homemade organic wine brandy. The maceration lasts 14 months, before everything is pressed and then drained. The eau-de-vie extracted from this young sloe marc reincorporated into our spirit gives it vitality and length. A sweet and sour symphony with a wild taste will transport you to the hills of southwestern France in the middle of winter...
