Founded in 2012 in the heart of the Gaeltacht region, the Dingle distillery is also located on the famous Wild Atlantic Way, a spectacular 2,600 km coastal route along the west of Ireland. Housed in a former sawmill, it boasts a 5,000-liter European oak mash tun. Its single malt, launched in 2016, is made from a 72-hour fermentation and triple distillation in small stills. With its fresh, fruity and herbaceous character, this version, with its aquatic and animal nuances, greedily reproduces the main character traits for which Irish whiskeys are renowned.

Nose : fresh and powerful. Superb malty notes, noble spices (cinnamon, ginger, nutmeg) and more medicinal scents (mustard) make up an initial olfactory sequence of great depth. On aeration, aromas of candied lemon, acacia honey, Louise Bonne pear and wild geranium blend harmoniously.

Palate : full-bodied, invigorating. Magnificently malty in turn, the palate is also marked by herbaceous (cut hay, lemon balm) and gourmand (porridge) flavors that rival in intensity. Increasingly vanilla-flavored, it evolves towards more acidic (lemon, candied), vegetal (watercress) and spicy (grated ginger) notes.

Overall : rich, full-bodied. Enhanced by tropical fruits (pineapple, banana), the finish is simultaneously liquorice and oily (olive). Echoing the gourmand character of the palate, the retro-olfaction evokes a vanilla flan. Long afterwards, fragrances of parsley and lovage literally emerge from the empty glass.
