Aperitives, bitters & Vermouth

Vermouths are a sub-type of the aperitif family and are distinguished by the fact that they necessarily contain wormwood ("wermut" in German). Invented in Italy, or in France (both countries claim paternity), vermouth is produced from white wine and alcohol in which a large number of plants, roots and spices have been infused. Served as an aperitif, it is often consumed before a meal, fresh, dry or in simple cocktails. The image created by the most famous brands - Martini, Noilly Prat, Cinzano, Dolin - has contributed to dissociate them from aperitifs and make them a category apart.
