Bozal Ensamble is an artisanal mezcal produced in Oaxaca, in the villages of Miahuatlán and Etla, using three agave varieties: wild-harvested Barril and Mexicano, and cultivated Espadín. It is crafted using traditional methods: the agaves are cooked in underground ovens heated with volcanic rock, crushed using solar-powered equipment, and naturally fermented before being double-distilled in copper stills. Bottled at 47% ABV, this mezcal offers a rich and balanced profile, with aromas of pear, green apple, vanilla and allspice. On the palate, fresh notes of lime, stone fruit and green pepper lead to a full, warming finish marked by mineral nuances and a subtle smokiness.

Nose : Balanced and expressive. An aromatic profile combining notes of fresh fruit (pear, green apple), sweet spices (vanilla, allspice) and a subtle smoky touch.

Palate : Full and complex on the palate. The Barril agave brings a vibrant freshness of lime zest, supported by notes of stone fruit and green pepper.

Overall : Warm and viscous, with the Mexicano agave extending the finish with elegant mineral and slightly earthy notes.
