A reflection of another era, this single cask was produced at a time when France had only a handful of distilleries, and is named after a very rare still. Composed of three pots and two rectification columns, the Blavier still was created by a famous early XXth century coppersmith. One of its unique features is found in its second column, a tube containing ceramic rings designed to remove the heaviest compounds from the alcohol to produce a more refined distillate. The wonderfully old school flavour and aroma palette has developed a personality marked by a sensitive expression and timeless nature.

Color : Ambre profond.

Nose : Fine, fleshy. The chocolatey, powdery (coffee) and fruity (raisin, mango, blood orange, apricot) first nose is dazzlingly pure. Elegant fragrances of celery and rice pudding then pay tribute to the Vin Jaune cask’s seamless integration. Allowed to breathe, mineral notes (slate) bring lots of substance to the aroma palette.

Palate : Rich, heady. The very fruity attack (bramble, blueberry) becomes intensely malty and chocolatey. The sunny mid-palate’s spicy (paprika, star anise) and liquorice character are particularly mouth-watering. Citrus fruits (orange, clementine), mint and cardamom refresh the end of the palate.

Overall : Full, generous. The slightly smoky start to the finish (lit Havana cigar) is then astoundingly mineral (coal, rock). Revealing delicious notes of toast, the after-taste wavers smoothly between the juicy firmness of peach and the sweet flavours of fig.
