With an estate spanning 60 hectares in the Fins Bois appellation and 8 hectares in Grande Champagne planted entirely with Ugni Blanc, Pierre Vaudon produces cognacs distilled in two pot stills, each with a capacity of 25 hectolitres. From the Fins Bois cru, this version was distilled in 1975 and aged alternately in a wet and dry cellar. Bottled at cask strength at 49,5%, it unfolds fruity, vanilla and herbaceous flavours of great complexity.

Nose : firm, concentrated. The milky (almond), vanilla and herbaceous (vine flower) first nose gets straight to the point. Allowed to breathe, fragrances of lavender, beeswax and dried apricot form a more developed second sequence. Gradually, spices (cinnamon, ginger) rise to the surface of the aroma palette, which continually becomes more refined (cocoa powder, fresh mango, melon). With time, lime blossom fragrances fill the air.

Palate : lively, elegant. On the attack, quince jelly slips into every crack of the flavour palette. The autumnal and just-as-rich mid-palate brings us chestnuts roasted on a wood fire. The extremely smooth end of the palate is characterised by notes of apricot jam, dried fig and toffee.

Overall : long, distinguished. The minimalist start of the finish is vanilla, floral (lime blossom), fruity (bitter orange) and waxy. Then, at the end of the finish, flavours of porcini mushroom, grated ginger and sweet chestnut pay showcase this version’s maturity. On the retronasal olfaction, notes of oak and caramel gradually envelop the taste buds. The empty glass is floral (orange blossom), with apricots and spice (clove).
