TWELVE Rhum Guyana/Jamaïque

Nose : On the nose, the soft sourness of Jamaican rums asserts itself. We are in the realm of English-style rum, bold and aromatic, where very ripe exotic fruits reign supreme. A backdrop of oxidized and roasted nuts, with walnut providing texture and depth. As it aerates, the intensely fruity and tropical character, with a hint of solvent, fades to reveal deeper, more integrated notes of prunes and walnuts.

Palate : The palate is powerful and striking, yet it also offers a certain richness that is immediately comforting. There’s a balance between the acidity of heavily dunder-infused Jamaican rums and the rough, powdered texture of old Demerara. In any case, there is a beautiful concentration of fruits, enveloped in a well-toasted cask, where the wood exudes notes of maple syrup, caramelized sugar, and soy sauce. In the finish, the molasses, richly flavored with licorice, rolls over the walnut, completely enveloping it.
