KOKKI The Kokki

The Kokki Sake Brewery is located on the shore of Lake Shinji in the castle town of Matsue. The establishment was built after the Great Fire of Bunka 5 (1808), and retains the appearance of a late Edo period townhouse. The earthen warehouse overlooking Lake Shinji, formerly owned by the Matsudaira family, lords of the Matsue estate, has been handed down and repurposed as a brewery. In the Kokki brewery, the local rice is mainly used "shuzo kotekimai" (from Shimane prefecture). Since 1998 the brewery has been working with its own method of rice cultivation, aiming at a more environmentally friendly agriculture. Traditional Izumo Toji techniques are used to produce authentic handcrafted sake using a traditional steamer (koshiki), koji lid, koji box and sake tank.

Kokki Junmai Daiginjo sake is made only with carefully selected rice, koji rice and water. The fruity aroma spreads through the nose and it is a luxury Junmai type sake: crisp and smooth on the finish.
