AUSTRALIAN WHISKY : Sullivans Cove 7 Year Old is a single malt from Australia.

PROFILE : This single malt reveals a rich and exuberant profile, featuring waxy, oxidative, tropical fruit, camphor and spicy notes. Produced from locally grown barley, this bottling was matured in a French oak cask that previously contained chardonnay.

Color : Topaze.

Nose : Rich and exuberant. Aromas of beeswax, varnish, sticking plaster, overripe white grapes, fresh walnuts, verbena, cloves, musk, Bourbon vanilla, and preserved lemon create an exceptionally dense aromatic profile. With aeration, exotic notes of banana and pineapple emerge, joined by camphor and a touch of peppery spice, adding further complexity and power.

Palate : Both vibrant and velvety. Bright citrus zest (grapefruit and lemon) brings freshness, while flavours of freshly grated ginger and praline lend a smooth, rounded texture. The palate is remarkably well balanced. Gradually, acacia honey, cumin, and liquorice envelop the taste buds, leading into a deeply malty finish with delicate chamomile infusion.

Overall : Long and silky. Reinforcing the oxidative and subtly grainy (rice-like) character found on the nose and palate, it recalls a Jura Chardonnay aged under flor. On the retronasal finish, notes of curry, bergamot, banana, and toffee slowly unfold across the palate. Long after the whisky is gone, the aromas left in the empty glass reveal floral hints of iris concrete alongside medicinal and malty (grist) nuances.
