ROCHELT 2016 Poire William

This pear variety was discovered by chance in the late 18th century in England by Mr. Williams and quickly became a favorite across Europe and the United States. Light green to lemon yellow when ripe, often blushed on the sun-exposed side, the Williams pear is known for its tender, juicy, and intensely flavorful flesh. Our Williams pears are grown under ideal climatic conditions in sunny western Styria. Each pear is left on the tree until fully ripe – a necessary step to develop the sweet and spicy aromas that later give our eaux-de-vie their unique fruity finesse. To ensure this, we handpick the pears in up to 15 separate harvest rounds per orchard. The fruits are carefully sorted again by hand and fermented on site the very same day. Fermentation begins naturally, without any additives. The 100% pure fruit mash is then transported to our distillery. After complete fermentation and a meticulous double distillation, the heart of the distillate is aged for at least six years in open glass demijohns. Once matured, this eau-de-vie bursts with juicy, ripe Williams pear aromas. It is at once powerful and full-bodied, yet soft and smooth.
