Produced from 1912 to 1985 by the spirits merchant Gilbey, Ireland’s most famous single pot stills was relaunched in 1991 by the Irish Distillers group, founded in 1966 and owned by Pernod Ricard since 1988. This magnificent version’s stripped-back palette of flavours and aromas is filled with fruity, chocolatey, mineral and herbaceous sequences that beam with maturity. The natural elegance and incredible depth are captivatin.

Color : Cuivre à reflets verdâtres.

Nose : Refined, concentrated. On the first nose, citrus fruits (orange, mandarin), toffee, Emery cloth and lavender fragrances reflect the aroma palette’s incredible complexity. With aeration, it shows great purity with exotic (mango, persimmon) and heady (turpentine) tones.

Palate : Rich, powerful. Intense chocolate notes stand out from the start. The deliciously tannic mid-palate reveals a variety of dried fruit and nuts (fig, date, chestnut). Finally, fruit-cake flavours bring great richness.

Overall : Long, full. With a very refined texture, the finish at first unveils astonishingly eloquent notes of plantain banana and botrytized grapes. The very noble after-taste moves between pipe tobacco, spice bread and lime blossom honey.
