    This cuvée was selected from the only active distillery still operating in Trinidad and Tobago, Trinidad Distillers Limited, founded in 1824. Made from molasses that was fermented for two days, this column-distilled expression was first aged for sixteen years on site in a bourbon cask, then matured for a further nine years in a cognac cask under continental climate conditions. Full of contrasts and subtle nuances, its aromatic profile moves from fruity tones to hydrocarbon notes, even venturing into distant territories that evoke a single malt from the Isle of Islay.

    Color : jaune doré.

    Nose : Refined and complex. At once exotic (pineapple, banana) and mineral (chalk), the aromatic palette gradually becomes more empyreumatic (hydrocarbons). Added to this are essential oil notes (rosemary, thyme, thuja). These two contrasting facets—fruity and organic—compete in intensity.

    Palate : Lively and slender. A true basket of ripe fruits (pear, pineapple, mango, kaffir lime), the flavor profile is delightfully juicy. Whiffs of warm asphalt and fuel form a mineral foundation upon which delicate white flowers (lily of the valley, lilac) gently rest. Gradually, acacia honey spreads across the palate.

    Overall : Velvety and distinguished. Kiwi notes further enhance the exotic character of this vibrant profile. A sensation of freshness is reinforced by a progression toward lactic (coconut, almond) and savory saline tones. A beautiful finish marked by hints of licorice and rooty gentian.
