    The Tsunuki distillery is the favourite testing ground for young master distiller Tatsuro Kusano, who trained under Komagatake distillery director Koki Takehira. Made from the Concerto variety of barley, this version is aged in a bourbon cask with a phenol content of 50 ppm. Particularly light, its aromatic palette and flavour also possess an extraordinary strength of character. A hallmark of the finest vintages, this divine contrast highlights a distillate of remarkable purity.

    Nose : Soft, airy. Scents of verbena, medlar, chalk, straw, artichoke heart, soot, pencil lead and dry peat take their turn on the aromatic palette. When it is aerated, lemon zest and Williams pears spread their fresh, tangy juice upon the whisky.

    Palate : Refined and dignified. Resting on a peaty, liquorice base, the palette of flavours abounds with leafy-green, bucolic sequences (alfalfa, dandelion, clover). Then the peat rises to the top, with superb iodine, salt, pepper and medicinal (balsam, sinapism) tones.

    Overall : silky and velvety. Vanilla, juicy (pear) and resinous (pine, Vosges candy), the finish is particularly smooth and balanced. Over time, while becoming more earthy, the peat has become gorged with salt and iodine. The empty glass is empyreumatic (smoked meat and fish).
