LOS DANZANTES Joven

From Santiago Matatlán, in the heart of the Oaxaca Valley, Los Danzantes Joven is an artisanal mezcal made exclusively from Espadín agave (Agave angustifolia Haw.). Grown in the region’s plains, the agaves are harvested by hand after at least seven years of maturation. The piñas are then slowly cooked in underground, wood-fired conical ovens, following a traditional method that imparts delicate smoky notes. After cooking, the agave is crushed using a tahona, a stone mill pulled by a horse, before undergoing natural fermentation in wooden vats. The resulting liquid is then double-distilled in traditional copper stills under the supervision of master distiller Karina Abad. Bottled at 47% ABV without barrel ageing, this Joven faithfully expresses the character of the agave and the terroir of Oaxaca. It reveals earthy flavours, volcanic stone and wood fire, creating a sensory experience that connects with our deepest emotions. Best enjoyed neat at room temperature to fully appreciate its complexity, or used in cocktails where its power and minerality add depth.
