LA ROCHE AUX FÉES 2020 Version Française Bourbon Cask

Since 2020, Version Française, a range dedicated to exceptional French spirits, has been traveling across the country to meet producers and showcase their craftsmanship. In 2000, Gonny and Henri Everts settled in Sainte-Colombe, where they first founded a brewery before venturing into whisky-making. The distillery uses two strains of locally cultivated yeast for a high fermentation lasting four to five days, resulting in a wash rich in esters. Initially entrusted to a traveling distiller, the distillation has been carried out on-site since 2015 using a small, modified Coyac still. With a capacity of just 300 liters, this still allows the production of one cask per week, firmly establishing an artisanal approach to whisky-making. Version Française highlights this expertise through an expression aged in a bourbon cask. This single cask, limited to 129 bottles, reveals a rich, grain-forward profile punctuated by notes of dark chocolate, orgeat, and currants.
