ASAMA

Founded in 1858 in Sakuho, Nagano Prefecture, Kurosawa Shuzō is a family brewery spanning six generations. Located at the foot of the Yatsugatake Mountains near the Chikuma River, it benefits from pristine water ideal for sake brewing.

Currently led by Takao Kurosawa and his son Yohei, who serves as the tōji (master brewer), the house preserves the traditional kimoto method, relying on natural fermentation and demanding manual labor. This process produces sakes with a deep, structured profile and a clean acidity that stays true to the terroir.
