The Kilchoman distillery, which was opened in 2005 at the Rockside Farm, presents this year two 8-year-old bottlings. They are both made from barley grown on site and peated to a similar degree (20 ppm) but fermented separately to explore the influence this stage has on the single malt’s organoleptic profile. This first version was distilled after a 75-hour fermentation. Particularly elegant, it showcases a peat with a pronounced empyreumatic and medicinal character that supports an expressive and distinguished palette of flavours and aromas.

Color : Or pâle.

Nose : Fine, slender. On the first nose, aromas of agave, soot, toast and turpentine bring out this Kilchoman’s empyreumatic nature. With aeration, notes of balm (mustard poultice, marmot ointment) add a strong medicinal character.

Palate : Distinguished, energetic. The lemony and floral (hyacinth, lilac) attack stages a fairly dry and diaphanous peat. The deeply salty and maritime (shellfish) mid-palate adds its own medicinaltouch (iodine tincture, methylene blue).

Overall : Long, dense. The very expressive finish is at first reminiscent of a Scottish moor with freshly cut blocks of drying peat. Equally as evocative, the after-taste returns to the agave notes of the first nose. Reflecting its maturity, it also reveals a harvest (straw, alfalfa).
