The Kavalan distillery has its own cooperage, enabling it to perfectly master the crucial ageing stage. On Jim Swan's invaluable advice, the emphasis is on STR (shaved-toasted-recharred) casks, which enable the single malt to reach full maturity more quickly. The second stage of our journey devoted to Kavalan, this version echoes Brandy Cask # A090620014 from the Créations Cellar Book, with which it shares the same witty character and generous fruitiness. More tertiary in nature, it takes us into a preciously woody, divinely liqueur-like universe that conjures up olfactory and gustatory memories buried deep in our memory.

Color : acajou.

Nose : Dense, full-bodied. Empyreumatic (incense), oriental (orange blossom), honeyed (heather) and herbaceous (cut hay), the aromatic palette has an undeniably poetic dimension. Restoring the waxy, glazed and preciously woody ambience of a cabinet shop, it continues with notes of date and prune.

Palate : Rich, balanced. Extravagant, the palette begins with magnificent flavors of cherry brandy and baked apple. Impressively present, it becomes increasingly honeyed, tertiary (raisin, chestnut), exotic (roasted pineapple) and spicy (paprika).

Overall : Full-bodied, generous. In the spicy (pepper, clove) continuation of the palate, the tasting evolves towards more acidic tones (tangerine, lemon). Then, venturing into the world of sweet wines, the finish oscillates between the black fruit of a Vintage Port and the more candied fruit of a perfectly mature Sauternes.
