Profile: perfectly balanced, the initial nose fluctuates between vanilla, dried fruit, nuts and honey. It then becomes spicy and floral (reseda). Very long, the palate is spicy and heady, while remaining resolutely ethereal and elegant. Magnificent range of brown, orangey, green and yellow hues.

- Appearance : orangey copper with glints of mahogany.
- Nose : full-bodied, rich. Alternating between shady areas of undergrowth (mushroom, moss) and sunny fields of ripe barley, the initial nose swings between fruitiness (candied citrus fruit, exotic fruit), chocolate, spice and chilli heat (Espelette pepper). With remarkable salinity, it then develops notes of rancio sherry (cherry liqueur, sweet wine). At the same time, it firmly reveals itself to be increasingly mineral (schist, marl).
- Palate : firm and taut but also delicate and unctuous. Perfectly well-balanced, saline notes (dried fish) appear first with deliciously sweet blood oranges. Next, on the mid-palate, heady florals (purple lilac, geranium) release their enveloping perfumes. Still with freshness, the palate then develops a more balsamic register (thuja, Cypress). Carried by an unrelenting minerality (pencil lead), black fruits (blackberry, blackcurrant) gradually appear. Ethereal and spirited, it becomes increasingly floral (rose, hyacinth).
- Overall : long, silky. The finish begins by inviting us to savour a delicious fig jam and dried dates. Intensely Andalusian, the finish wonderfully evokes the image of Pedro Ximenez grapes drying out in the sun before being pressed to free their sweet juice. On the retro-nasal olfaction, exotic fruits (banana, mango, pineapple) arrive in a grand finale. The very expressive and open empty glass is a delicious blend of cocoa powder, fresh tobacco, cinnamon and burnt earth.
- The brand
The Karuizawa distillery was built in 1955 in the town of the same name, in the prefecture of Nagano surrounded by the Japanese Alps. Japanese whisky generally has a very good reputation, but Karuizawa is especially sought after and appreciated by connoisseurs; it has accumulated an impressive number of medals in competitions. Just like Macallan, it is a whisky that owes much of its character to the type of barley that is used: (‘Golden Promise’) and to ageing in sherry casks. Production stopped in 2000 and bottles are becoming increasingly rare.
