Founded in 1487, Hiraizumi Brewery is the third oldest sake brewery in Japan. Located in Akita Prefecture, in northern Japan, it has been producing sake for 27 generations. The brewery strictly follows the traditional Yamahai brewing method, developed in the early 20th century, which involves a long fermentation starter process and results in rich, full-bodied sakes. Hiten is the flagship brand of Hiraizumi Brewery.
