Produced by Enoki Shuzo, a family-run brewery on Kurahashi Island (Hiroshima) and a pioneer of this style, this 8-year-old Junmai Kijoshu is brewed using a method in which part of the water is replaced by sake that has already been fermented. Its amber colour reveals a dense, mature and exceptionally smooth profile. An elegant and complex tasting sake, ideal for pairing with food, particularly mature cheeses.
