Founded in 2017 by Tom Nicolson, Cory Mason and Tagor Ramouter, the Fielden distillery is set to open a new production site equipped with three hybrid pot stills at the end of 2024. In addition to its rye whisky, it also produces gin and vodka with organic grains grown at four neighbouring farms. This small batch is a blend of American oak casks and Sauternes, Moscatel and Madeira wine casks, and has maintained all the fresh and natural character of its youth. The extremely expressive and spirited palette of flavours and aromas becomes continually more complex and fleshed out, peaking in an irresistibly mature expression.

Nose : Lively, heady. At first offering clear parallels with gin (juniper), the aroma palette quickly develops more milky tones (almond). Toffee and rye bread notes then take us to the world of American whiskey. Allowed to breathe, peach and melon form a lovely fruity transition.

Appearance : vieil or soutenu.

Palate : Clean, dynamic. The flavour palette is herbaceous (gentian, dill) and a delicious pretext to rediscover the peach notes found on the nose. Increasingly empyreumatic (kernel) and floral (ylang ylang), the palate then develops more salty, caramelised and lemon tones.

Overall : Long, well-balanced. Spices (ginger, cinnamon) make an impressive entrance and fill the air, while abundant herbs (rosemary, chervil) add to the herbaceous register. On the retro-nasal olfaction, vanilla pod and William’s pear bring a lot of creamy freshness.
