Fully appreciating all the fragrances and flavours, that this demanding Evan Williams contains, requires a little patience. It is only after the initial encounter that the full richness and complexity of its aromatic and gustatory palette emerge to reveal their full force. Deeply intertwined while remaining clearly defined, the three stages of the tasting process all share a similar vibrancy, intensity and firmness.

Nose : simultaneously powerful and ethereal. The initial nose is characterised by notes of dried fruit (apricot, dates), lime blossom honey, crème brûlée and green liquorice. It moves on to freely express its creamy graininess, with maize taking centre stage. It lingers on notes of exotic fruits (roasted pineapple, flambéed banana) and fresh oak._x000D_ _x000D_ _x000D_

Palate : energetic and formidable. The same apricot-inspired, roasted register found in the nose immediately takes over the taste-buds. Cocoa beans and candied ginger appear along the way, lending the mid-palate a powdery, fibrous dimension that is full of elegance. Streamlined, it gradually becomes spicy (cinnamon), liquoricey and vanilla-scented._x000D_

Overall : long, firm. The perfect finishing touch continuing on from the end of the palate, the finish is evocative of a storehouse drenched in vanilla, woody, spicy and resinous aromas. Flowers (broom, iris) enhance its heady, sunny character. The retro-nasal olfaction wavers between citrus fruit zest (lemon, orange), ripe fruits (plum, peach), herbs (thyme, oregano) and dried fruit (dates). The empty glass is a pure ode to maize.
