PROFILE : This single malt reveals a fresh and ample profile, featuring rich, vanilla, herbal, medicinal, fruity and menthol notes. It is finished in a cask that contained Grand Marnier liqueur.

Nose : fresh and full. Initially revealing aromas of lemon meringue tart, the nose quickly develops more infused notes (sage, chamomile) alongside vanilla. With aeration, the aromatic profile becomes medicinal (mustard plaster) and fermentative (grist). Gradually, white fruits (pear, apple, mirabelle plum) move to the forefront.

Palate : both lively and rich. Intensely malty and spicy (clove, star anise), the palate is energised by citrus zest (lemon, pink grapefruit) and peppermint flavours. Smooth and generous, the end of the palate alternates between exotic fruit (banana, pineapple) and indulgent confectionery notes (Calisson d'Aix, boiled sweets).

Overall : full and dense. Coconut milk, lemon zest, vanilla pods and barley grains create a particularly balanced and vibrant opening to the finish. As a final flourish, the retro-olfaction reveals flavours of cut hay, green liquorice and Velay verbena, pleasantly refreshed by the juice of a Williams pear.
