Nose : rich, concentrated. Evoking the oxidative character of a great Jura yellow wine, the aromatic palette is also marked by notes of vesuvius and cane honey of great purity. On aeration, it becomes vanilla, spicy (curry, star anise), medicinal (balsam), fruity (pineapple, pear, combava) and floral (jasmine, lily).

Appearance : vieil or soutenu.

Palate : clean, racy. Liquorous (cane sugar), tangy (lemon), saline and supported by a herbaceous, infused bitterness (sage, chamomile), the taste palette is a model of balance. Over time, flavors of agave sap, candied pear and fresh walnut gradually coat the taste buds.

Overall : concentrated yet elegant. Vanilla, mineral (slate) and slightly empyreumatic (eucalyptus), it oscillates between notes of acacia honey, green licorice, citrus (grapefruit) and tropical fruit (pineapple). Sprinkled with cinnamon and nutmeg, the aftertaste and empty glass offer a harmonious whole.
