Created by Dariusz Plazewski, the owner of England’s Bimber distillery, The Dava Way Project is named in reference to the famous 24-mile trail between the Scottish towns of Grantown-on-Spey and Forres in Speyside. But that doesn’t stop this independent range from venturing off-piste and, where necessary, setting its sights on Islay. If we had to describe this Caol Ila’s flavour and aroma palette in just a few words, they would undoubtedly be “unusual”, “captivating”, “temperamental” and “anti-conformist”.

Color : Or vif.

Nose : Lively, taut. The original first nose is peaty, smoky, salty, spicy (ginger), vegetabley (cauliflower) and empyreumatic (sleet). This unique entrance develops into pharmaceutical notes (aspirin, cloth bandage) that confirm the aroma palette’s unusual personality.

Palate : clean, dynamic. On the attack, flavours of dried peat invade the palate. Things then become medicinal (cough sweet) and milky (almond, walnut). In the after-taste, notes of tobacco and ash hand over to candied fruits (orange, apricot).

Overall : long, well-rounded. Grains of malted, smoky barley gush forth while, contrasting the malt’s pale colour, the flavour palette takes on a hugely diverse range of orange shades. In the after-taste, thepeat becomes increasingly dark, rooty (ginger, ginseng) and salty.
