Dariusz Plazewski named his distillery ‘Bimber’ after the Polish word for ‘moonshine’. Keen to know exactly what every cask has previously contained and for how long, he set up a very strict selection process for barrels. With its particularly delicate texture, the mid-palate of this ex-cognac cask is reminiscent of a great Speyside single malt.

Color : Vieil or.

Nose : Fine, ethereal. The very delicate nose is powdery (rice), spicy (fresh ginger), luscious (ivy) and floral (honeysuckle). Allowed to breathe, fragrances of arnica, dark chocolate, candied Mirabelle plum and barley porridge create an incredibly concentrated second sequence of aromas livened up with a refreshing salinity.

Palate : Firm, powerful. The rich and dense attack brings to mind Breton pound cake. The mid-palate then reveals a very refined texture. Infused with a pleasant malty bitterness, the end of the palate also brings lush herbaceous notes (bay leaf, lemon balm, sorrel).

Overall : Long, well-nourished. Like a Jura vin jaune, the hot flavour palette (Espelette pepper, curry) becomes increasingly rooty and rustic (gentian, dandelion), candied (pear, walnut) and tertiary (date, plum). The after-taste is impressively persistent.
