ABSTRACT Monochrome Olive

Abstract Olive Noire is a distinctive distillate by Rémy Savage, part of the Monochromes collection. Vacuum-distilled at the Abstract Lab in Lyon, it explores the depth of a single ingredient: the black olive of Nyons PDO, from the Tanche variety. It contains no additives and no sugar. It shows saline, gently fruity notes, somewhere between fine brine, forest floor and candied sweetness, with a broad texture and a mineral finish. Both Mediterranean and precise, Abstract Olive Noire works as well in a Dirty Martini or an Olive & Tonic as it does neat, for a boldly savoury experience.
