    AMERICAN WHISKEY : Willett Rye 8 Year Old 2018 is a rye whiskey from Kentucky in the United States.

    PROFILE : This rye whiskey reveals a concentrated and heady profile, featuring rye, waxy, vanilla, floral and spicy notes. Made from a mash bill of 74% rye, 11% corn and 15% barley, this cask-strength bottling was matured on the 9th floor of warehouse G.

    Color : vieil or soutenu.

    Nose : Concentrated and heady. Youthful in spirit, the initial nose reveals aromas of rye, plantain, wax, candied lemon, and verbena, forming an olfactory profile that is both elegant and tightly knit. With aeration, bold spices (clove, green pepper, turmeric) mingle with vanilla and floral (hyacinth) notes of great purity.

    Palate : Lively and sleek. Extending the vanilla, citrus, and herbal-infusion notes of the nose, the palate is refreshed by a pleasant sequence of menthol, malt (rye), and licorice (root). Becoming increasingly indulgent (flan, *calisson d’Aix*) and honeyed (acacia), the flavor profile simultaneously takes on herbaceous (alfalfa) and earthy (freshly tilled soil) qualities.

    Overall : Rich and velvety. Evoking the harvest season, it is initially imbued with cereal aromas and flavors. Radiating maturity, it evolves toward notes of citrus (grapefruit), honey (lavender), milky tones (almond, coconut), vanilla, and balsamic nuances (pine, thuja). Mineral (slate), herbaceous (cut hay), empyreumatic (eucalyptus), and mouth-watering, the retro-olfaction echoes the exotic character of the aromatic profile (pineapple, banana).
