The son and grandson of travelling distillers, Sébastien Castan has been at the helm of this family-owned distillery since the early 2000s. Assisted by his wife Céline, he first began producing whisky in 2010. This bottling was matured for two years and eight months in a chardonnay cask followed by more than one year in a Rivesaltes cask, and stands out for its beautifully mature profile. Peat guides the tasting but leaves the field open for a free expression of fruit, spices and medicinal notes.

Color : Jaune doré soutenu.

Nose : invigorating, fresh. The nose opens with a sunny array of aromas embodied by lemon zest, vanilla and cut hay. Allowed to breathe, smoked meat and lots of different spices (pepper, star anise, cumin, cinnamon) appear alongside malt and honey (acacia, lavender).

Palate : clean, dynamic. The palate is fruitforward and rich (rice pudding), revealing an elegant syrupy profile (candied grape), as well as resin (pine) and delicate peat flavours. Minerality is there too, before subtle medicinal notes (ointment) gradually envelop the entire ensemble. Pleasantly salty.

Overall : long, well-balanced. The impressively smooth finish opens with a combination of malted barley and ripe fruits (apple, pear). With time, liquorice, praline, citrus fruits (grapefruit) and barley grains mix together in a delicious union.
