French Oak Second Fill has a history as rich as its aromatic profile. This single cask was distilled in October 2012 and bottled in July 2025, after 12 years and 8 months of maturation in a 300-litre French oak ex-Tawny cask. Initially used for the maturation of a previous batch of Sullivans Cove single malt, the cask was carefully selected to undergo a second maturation. This ageing process perfectly showcases the richness of the French oak, while allowing the character of the Sullivans Cove distillate to fully express itself.

Color : Or

Nose : Brown sugar, molasses and dark rum open the nose with warmth and depth. Spicy notes add lift and complexity, while cherry tart and cacao bring balance and elegance to the whole.

Palate : Light and subtle, it opens with soft, enveloping vanilla cream. Chewing gum brings a playful touch, followed by the juicy freshness of watermelon. Cotton candy extends the profile with an airy, indulgent and nostalgic finish.

Overall : Lingering and creamy, with notes of strawberry, donut and apple turnover, lifted by a touch of coconut icing.
