Created by Master Distiller Heather Tillott and the sensory team at Sullivans Cove Distillery, this single malt embodies the art of blending, bringing together in each release the distinctive qualities of French and American oak casks. Double Cask DC121 is crafted from a blend of whiskies, with the youngest matured for 7 years and the oldest for 18 years. This small-batch expression was bottled at 47.3% ABV and yielded 1 295 bottles.

Color : Doré brillant

Nose : Crisp and open, with a broad structure that balances lightness and depth. Tart apple, sorbet, buttermilk and vanilla. Soft brine and caramel syrup, salted caramel profiterole, fig syrup and dates.

Palate : Creamy and juicy, with a round, chewy texture that coats the palate. Spices, cocoa powder, dark chocolate and orange. Brown butter and sage add depth, while lemongrass and white pepper bring energy and freshness.

Overall : Long, intense and generous, the finish carries a powerful wave of flavors. Caramel, brown sugar, toasted marshmallows, roasted hazelnut and maple syrup pancakes. Warmth and spices then set in.
