The Sanchez distillery is a small family business that has been established for over 150 years in Candelaria Yegolé, a village in the state of Oaxaca. For four generations, the Sanchez maestro mezcaleros have succeeded one another from father to son, crafting mezcales of exceptional quality. The Jabali agave is a wild agave widely found in the "Sierra Sur" of Oaxaca state, where it takes up to 15 years to reach maturity in a dry climate. Its fibers are used by certain communities to make ropes, commonly known as "Jabalinas".
