The Tsunuki and Komagatake distilleries select some of their casks for aging in a cellar opened in 2016 on the island of Yakushima, in the far south of Japan. An island where, according to a local proverb, it rains 35 days a month and temperatures oscillate between 5°C in winter and 35°C in summer, favoring a share of angels approaching 9% per year. Matured since March 23, 2020 in Yakushima, this version distilled at Tsunuki takes us in turn through the Jura vineyards and into an Andalusian winery. Oxygenated, spicy and dotted with tertiary tones, its aromatic and taste palette is resplendent with maturity.

Color : cuivre orangé.

Nose : deep, distinctive. Extremely complex, the aromatic palette offers a succession of wonderfully oxidative sequences (yellow wine, sherry vinegar, cherry brandy), oily (fresh walnut, pecan), spicy (curry, ginger), chocolatey and fruity (fig, date), each more breathtaking than the last.

Palate : racy, haughty. Overflowing with dynamism, the palate reveals new fruits (mirabelle plum, yellow plum, candied orange). It then evolves brilliantly towards more honeyed, powdery (cocoa, ginger), infused (laurel, verbena) and balsamic (resin, pine) registers.

Overall : intense, suave. At first, flavors of coconut milk, toffee, coriander, cherry and raisin underline the richness and generosity of the palette. Then, transporting us to the middle of an Andalusian wine cellar, it returns in full force to the oxidative, rancid tones of the aromatic palette.
