INISHIE

Founded in 2017 by Mr. Yasumura, Inishie specializes in the curated selection of Koshu—vintage sakes aged at ambient or warm temperatures before bottling. This aging process triggers the Maillard reaction, transforming the sake into an amber liquid with distinct woody and spicy aromas.
Through a process of very slow oxidation, these sakes can age for 10 to over 30 years. A delicacy enjoyed as far back as the Edo period, Koshu represents a rare heritage of Japanese sake. Inishie travels across Japan to discover exceptional vintages, such as those from 1983 and 1990.
