PROFILE : This rum reveals a rich and oaky profile, featuring notes of ripe fruit, sugarcane and spices. Made from the ancient variety of cristalline sugar cane harvested by hand, it is distilled from fresh juice without any added chemical yeasts or water.

Nose : Ample, refined. Medicinal (mustard seed), fruity (pineapple, combava), oily (rosemary, sage), camphoric, spicy (clove, nutmeg) and heady (geranium blossom, carnation), the aromatic palette displays impressive lift. With aeration, macerated fruits in fresh cane juice enrich the olfactory scene.
Palate : Lively, invigorating. Both powdery (rice) and spicy (fresh ginger, clove), the flavour profile is gradually enveloped in delicious medicinal notes. As they subside, the tropical fruits revealed on the nose take centre stage.
Overall : Full, silky. Heady (iris concrete), rooty (gentian) and vanilla-tinged (vanilla pod), the finish is invigorated by citrus notes (lemon, combava). Nobly spiced (cardamom, clove), the retro-olfaction lingers on with very pure liquorice tones. Milky (almond, agave), the empty glass exudes aromas of freshly distilled cane juice.
