Kuheiji 35 is the new name of Kamoshibito Kuheiji's nihonshu sake 'Betsu-atsurae' (meaning 'special label' in Japanese), renamed to simplify understanding for non-Japanese speakers, but also to better communicate the notion of the rice polishing rate (35). An absolutely luxurious junmai dai-ginjo, in which richness, minerality and acidity are in perfect harmony with finesse and delicacy. Fine and fluffy, it reveals notes of exotic fruit (pineapple and lychee), white truffle, lilac and pineapple.

Nose : Fin, riche. Duveteux, son fruité caresse les papilles. La rondeur et l’exotisme sont de mise. Le second nez précise les choses, la poire, le riz, les champignons (truffe blanche), les fleurs (lilas) nuancent avec caractère une belle matière herbacée.
Overall : Longue, elle ne perd rien en intensité. Les levures donnent le ton, il sera fruité, melon, figue. Evoque un « okashi », gâteau japonais traditionnel. Des fruits secs (figue, datte) lui donne raison. Ses tannins rétrécissent le palais et le verre vide est cristallin.
