Produced from a three-day fermentation at high temperature (between 28 and 33°C) and slow distillation (24 hours) in large pot stills with stainless steel lower parts and copper upper parts, the single malt crafted by Hellyers Road displays a character that is both rich and creamy, yet firmly structured. Remarkably complex, this version aged in oloroso sherry casks immediately sets the tone for a tasting that oscillates from start to finish between exuberance and smoothness. The varnish notes on the nose and the honeyed tones on the palate perfectly illustrate this duality.

Nose : Deep, generous. Initially, delicate notes of salted butter caramel, apricot, violet and red fruits (strawberry, raspberry) form an impressively diverse aromatic ensemble. With aeration, it becomes spicier (fresh ginger), lactic (coconut), and slightly burnt (varnish, wax).

Appearance : vieil or à reflets cuivrés.

Palate : Lively, assertive. In line with the nose, the palate quickly reveals its malty character. Gradually, honeyed notes (lavender) and gently toasted flavours (grilled bread) bring roundness and indulgence to an elevated finish.

Overall : Delicate, serene. Notes of currants, figs and dates spread generously over the tongue and around the palate, delivering a lovely sense of maturity. The empty glass, to the very last nuance, reflects the immense aromatic richness of the nose.
